Waffles- The Go To Meal

If your family is like mine, you love waffles for breakfast, lunch and dinner! We love the ease of waffles and the fact that you can easily make them and freeze them for later! They are basically homemade Eggos but obviously anything homemade is always better! Plus I use Costco coconut oil so they taste a bit tropical and love that taste mixed with Maple syrup!



Here is my tried and true recipe I use for Waffles and the measurements for the mega batch of waffles to make and freeze!



Waffle Recipe- 1 Batch


  • 2 cups of flour

  • 1 tsp salt

  • 4 tsp baking powder

  • 2 tbsp white sugar

  • 2 eggs

  • 1 1/2 cups milk- Room temp is best

  • 1/3 cups coconut oil

  • 1 tsp vanilla extract


Preheat your waffle iron

Mix together the flour, salt, baking powder and sugar in a bowl

Beat your eggs and add in the milk, oil and the vanilla

Pour your wet mixture into the dry mixture and mix until blended

Using a ladle, pour mixture into waffle iron and cook until golden brown


Mega Waffle Recipe

  • 8 cups of flour

  • 4 tsp salt

  • 16 tsp baking powder

  • 8 tbsp white sugar

  • 8 eggs

  • 6 cups milk- Room temp is best

  • 1 and 1/3 cups coconut oil

  • 4 tsp vanilla extract


Preheat your waffle iron

Mix together the flour, salt, baking powder and sugar in a bowl

Beat your eggs and add in the milk, oil and the vanilla

Pour your wet mixture into the dry mixture and mix until blended

Using a ladle, pour mixture into waffle iron and cook until golden brown
